These cookies? Easy, fluffy, gooey, and grain free!

These soft and chewy cookies are made with coconut sugar, almond flour, and grass-fed butter for a delicious, grain-free treat the whole family will love.


Ingredients

  • 1 cup coconut sugar

  • 5 cups almond flour

  • 3/4 cup grass-fed butter, softened

  • 3 teaspoons vanilla extract

  • 5 eggs

  • 1/2 tablespoon baking soda

  • 1 tablespoon baking powder

  • 1/2 tablespoon salt

  • 1 cup coarsely chopped cacao nibs


For Titus’ Favorite Version:

  • 3/4 cup peanut butter (if adding peanut butter, reduce butter to 1/2 cup)


Directions

  1. Preheat oven to 350°F.

  2. In a large mixing bowl, combine coconut sugar, softened butter, vanilla, and eggs.

  3. Stir in almond flour, baking soda, baking powder, and salt until well combined.

  4. Fold in cacao nibs. (Add peanut butter here if making Titus’ favorite version.)

  5. Drop dough by rounded tablespoonfuls about 1 inch apart onto a parchment-lined cookie sheet.

  6. Bake for 10–14 minutes, or until lightly browned. Centers will remain soft.

  7. Cool slightly on baking sheet, then transfer to a wire rack to cool completely.


Makes approximately 40–45 cookies.
